A Return to Taipei
Chef Rick Bayless traveled to Taiwan in anticipation of the Rotary 2026 Convention in Taipei, returning to a city he first visited 30 years ago and rediscovering its culture and cuisine.
When Bayless first visited Taipei three decades ago, he discovered a city alive with flavor, tradition, and cultural depth. While the city has evolved, it remains vibrant, welcoming, and rich in history.
Invited by Rotary International ahead of the Rotary 2026 Convention in Taipei, Bayless embarked on a culinary and cultural exploration of Taiwan’s capital. His goal was simple: experience the city fully and share it with Rotary members around the globe.
Exploring Taipei’s Culture and Landscape
Taipei, which means “north of Taiwan” in Chinese, serves as the political and cultural center of the island. There are countless reasons to visit, from dramatic natural landscapes and historic architecture to its globally respected culinary scene.
During his visit, Bayless traveled north of the city to Yehliu Geopark, toured the National Palace Museum, and experienced the lively Ningxia Night Market after dark. Known for its iconic food stalls, the market offers an immersive introduction to Taiwanese street cuisine.
He also witnessed a Rotary community food project, one of the highlights of his time in the city as preparations continue for the Rotary 2026 Convention in Taipei.
Food has always been my favorite way to learn about culture and to connect with people.
A Culinary Collaboration
Bayless was guided by Rotary hosts and connected with restaurateur and Rotary member Henry Hsieh. Together, they visited Binjiang Market, a bustling marketplace where local chefs source fresh produce, seafood, and specialty ingredients central to Taiwanese cooking.
After selecting ingredients, they continued to Henry’s restaurant, Wildwood. There, Bayless met Chef de Cuisine Jarry Liu and Rotary member Jay Liu. The group prepared a meal together, exchanging techniques and stories as they worked.
Bayless was especially excited to cook on Wildwood’s wood grill, an experience that felt both familiar and unexpected in Taipei.
I never thought I would get to cook on it in Taipei.
Cooking alongside chefs in another country is something Bayless embraces wholeheartedly. Through shared ingredients, methods, and conversation, they discussed culinary history, childhood influences, and the role food plays in shaping identity and community.
At the end of the day, family is most important.
The experience concluded in the most meaningful way possible: by sitting down together to share the meal they had created.
Why Taipei Is a Global Destination
Taipei offers a rare blend of heritage and innovation. Traditional temples stand near modern architecture. Night markets operate alongside refined dining establishments. Cultural preservation coexists with forward-thinking creativity.
For those attending the Rotary 2026 Convention in Taipei, the city itself becomes part of the experience. Beyond convention sessions and fellowship, visitors will encounter a culture that values hospitality, craftsmanship, and shared meals as expressions of connection.
The culinary landscape alone reflects Taiwan’s layered history, influenced by migration, trade, and family traditions passed down through generations.
Hospitality and Lasting Impressions
Bayless described Rotary’s hospitality as remarkable. His time in Taipei left a lasting impression not only because of the cuisine but because of the warmth of the people who welcomed him.
You learn, you share, you eat, and if you’re open to it, the world gives you something back.
He expressed excitement for thousands of Rotary members who will gather for the Rotary 2026 Convention in Taipei in June 2026.
Taipei is ready to welcome the world with culture, cuisine, and connection.
